Performance, edge retention and ease of maintenance were top priorities in designing a tool to deal with the daily struggle of a professional kitchen.
The steel and heat treatment were carefully chosen to allow maintenance when it's needed most: mid-service! (ideally with a fine ceramic rod).
The grind/polishing are done to aid cutting power and minimize wedging/food stickage thus keeping the need for thinning far away and easy to do when the time comes.
The hp Series represents a more refined and polished expression of the craft, with increased attention to detail and finish.
These knives are designed for those who value both performance and aesthetics, featuring enhanced fit and finish throughout.
Each knife comes complete with a fitted saya, offering a more elevated and complete package.
In this beginner-friendly workshop, designed for up to 3 participants, you'll learn the techniques of knife sharpening—a fundamental skill for any professional or home cook. Master sharpener and kitchen knife maker Hugo Petry will be teaching traditional free hand sharpening techniques in this class, which includes a perfect blend of theoretical insights and hands-on practical experience. Here you will learn everything you need to know on transforming a dull knife into a perfect cutting tool.

This workshop is designed for beginners with no prior experience in knife sharpening.
All necessary materials, including carefully chosen knives and sharpening tools, will be provided for use during the workshop. you don't have to bring your own . If you have your own knives, feel free to bring them for personalized guidance.
